Sweet Egg

This comes from my dad's recipe book. Its one of our family favourites.

4 eggs
1 small onion, finely chopped
3-4 medium sized ripe red tomatoes, finely chopped
1 tsp kashmiri red chilli powder
1/4 tsp turmeric powder
1 tsp sugar
salt, to taste
2 tbsp cooking oil

Heat oil in a pan. Put in the onions & saute till light brown. Add in the tomatoes & salt & saute till it becomes into smooth paste. Just sprinkle some water if it starts sticking to the pan. Add red chilli powder, turmeric powder & sugar & saute for another minute or so. Spread the mixture evenly on the pan & break the eggs carefully into it. Cover the pan & simmer on very low flame. Cook till the yellows of the eggs turn pink. Turn off the heat.

Serve hot with plain boiled rice or chappatis or bread.

Hi Tina - thank you for letting us know of the change. Once again, another fantastic name for your blog. All the best. Wonderful beginnings. We just loved both sweet egg and drums of heaven. Keep it coming. Bonne chance!

Looks mouthwatering! I am going to make this soon...minus the sugar though. Don't have that much of a sweet tooth :P

Hi Sury,

Thanx so much..

The sugar actually adds to the sweetness of the tomatoes. But you could try it without the sugar.
Do let me know how it turns out.

Hi Indianadoc,

Thanx for visiting my site... Surely, this recipe is noted on my list of cooking on lazy days... but it happens to be one of my favourites & I am sure u will like it too... The sugar adds to the sweetness of the tomatoes... making the dish sweet & spicy...
